Hi ..
Can you tell me what gives wine its flavour? Specifically the flavours of apples , berries etc that can be found in wine.

Hi Paul, many of the flavours that people detect in wines occur because the grapes from which they’re made contain the same or very similar flavour compounds to those found in things like apples, berries, citrus fruit and so on. Climate also has an effect – hotter places give riper, sweeter fruit characters than cooler ones. Winemaking too has a major impact through things such as oak-aging, lees contact and types of yeast. In a few (thankfully very few) instances, some unscupulous producers will add fruit essences to thier wines, but ins general, a wine’s flavours are all down to nature and nurture. Hope that helps.
